Mättu’s Sandwich

Ingredients for 4 Portions

125 g ham
175 g mature Emmentaler AOP
1-2 carrots
½ cucumber
½ bunch parsley
100 g low-fat quark
1-2 tbsp mustard
Salt, pepper
8 large slices of bread
8 large lettuce leaves

Star of the dish

Cut the ham into strips. Grate the Emmentaler AOP, carrots and cucumber using a ‘roesti’ grater (box grater). Finely chop the parsley. Put everything into a bowl together with the quark and mustard, lightly season with salt and pepper and mix.

Take 4 slices of bread and place a lettuce leaf on each one. Spread the mixture on top. Cover each slice with a lettuce leaf and finish with the remaining slices of bread.
