Zoe Torinesis Potato gratin with pears, bacon and Emmentaler AOP

Ingredients

Ingredients for 4 servings

  • 1 large garlic clove
  • 250 ml milk
  • 300 ml single cream
  • 5 tsp salt
  • Pepper
  • Nutmeg
  • 3 kg floury potatoes, peeled and sliced into approx. 3 mm slices
  • 1–2 pears (approx. 250 g), cut into approx. 1 cm cubes
  • 150 g bacon cubes
  • 4 sprigs of thyme, leaves stripped off
  • 130 g Emmentaler AOP (matured for 12 months), finely grated
  • 30 g walnuts, roughly chopped

Preparation
  1. Place the garlic, milk, single cream, salt, pepper and nutmeg in a tall container and purée using a hand blender. Place a little of the mixture in a large oven-proof dish.
  2. Spread a layer of potatoes on top. Sprinkle a little pear, bacon and thyme on top and pour over a little of the mixture. Add another layer of ingredients, followed by a little more mixture. Continue like this until all the ingredients are used up.
  3. Bake for approx. 50 minutes in the middle of a preheated oven at 180°C top/bottom heat. Remove the dish from the oven and increase the temperature to 230°C.
  4. Sprinkle Emmentaler AOP on top and bake on the top rack for 10–15 minutes.
  5. If the cheese is not yet golden brown, briefly place it under the grill. Remove from the oven, sprinkle with walnuts and more thyme to taste.

Leave to rest for a few minutes before slicing.
