Cheese tart with leek

Ingredients for 5 Portions

To fit a 28 cm diameter flan tin.
2 leeks
1 tbs butter
150 g mature Emmentaler AOP
150 g mild Emmentaler AOP
3 eggs
30 cl milk
1 garlic clove
salt, pepper, nutmeg
pastry, rolled out into a round

Chop the leek into rings. Heat the butter in a frying pan. Cook the leeks for approx. 5 minutes. Grate the Emmentaler AOP on a Rösti grater. Whisk the eggs and milk; add the crushed garlic. Add the cheese and leek and mix thoroughly, then season.

Line the flan tin with the pastry. Use a fork to prick the pastry base. Spread the cheese mix over the pastry. Bake on the bottom shelf in a hot oven at 220 °C for approx. 30 minutes.
